Hiramasa (also called Baja Yellowtail or Kingfish in Australia) is highly regarded by the Japanese who use it in its raw state as sashimi or sushi. If you prefer cooked fish, hiramasa is also tasty when grilled, seared, or baked, especially when cooked rare. It has a firm texture with large flakes and a bright, almost sweet, flavor. We like it quickly seared on all sides and serve it with an Asian marinade.

Baja hiramasa are responsibly farmed without the use of antibiotics or parasiticides. The fish are fed a sustainably sourced protein, an omega-rich meal derived from sardines. Low mercury level. Kosher.
