Lots of fish are called sea bass. Black seabass, though, are actual members of the bass family who inhabit reefs along the East Coast. They are hermaphroditic, born female, and once they reach a certain size they become male, mostly after spawning.
Their flesh is moderately firm and lean with a mild, delicate taste. Seafood Watch rates black seabass a "Best Choice" or "Good Alternative," depending on how it is caught. Low mercury level. Kosher. Each fish weighs approximately 1.5 lb.
