The organic Linguini produced by Pastai Gragnanesi I.G.P. (Protected Geographical Indication) is chewier, nuttier, and rougher textured (i.e., clings to sauces better) than most supermarket brands. In Italy, pasta is a "sacramental" object regulated by steadfast traditions. Pasta is fed to infants as soon as they are able to eat solid food, and in Italian households, its place as the first dish at lunch or dinner is virtually a law.
Once you have had a taste of this toothsome pasta, itโs hard to imagine eating anything else. The flavors of the wheat shine through each noddle and the structure of the pasta has a real bite to it, making it the star of the dish instead of a mere accompaniment used to scoop up the sauce.
