We are always happy to feature a local-ish fish. A cousin to trout and salmon, whitefish is a mainstay of the commercial catch in the Great Lakes because of its exceptional flavor, convenient size, and habit of swimming in schools.
It is light and delicate with large flakes. Its fat content makes it excellent for smoking. You can use it in just about any recipe that calls for a "white fish."
