Trawl or line caught, Iceland.
This high-quality Icelandic cod is cut exclusively from the loin. Its firm, large, succulent flakes have a mild flavor. You can do almost anything with it. Unlike most fish, it stands up well to hearty sauces. It is great for fish and chips, and It is good sautéed, steamed, baked, and fried.
Icelandic cod is the same species as the more familiar Atlantic cod, but the jury is still out on whether or not they are separate stocks. In any case, Icelandic cod comes from the chilly waters around Iceland and is generally much larger and more migratory (thus leaner) than its overfished southern relative. We know you'll enjoy it!
Icelandic Cod is MSC (Marine Stewardship Council)-certified. Low to moderate mercury level. Kosher.
